Tomato salad for lunch

To me, this is lunch in the Summer.

Very simple ingredients, unfussy preparation and then take 20 minutes off work and enjoy the sound of silence in the verandah.

Ingredients:

Ripe tomatoes;

Olive oil from Cumeada;

Sea salt;

Fresh basil;

Hard cheese from the São Jorge island of the Azores

Preparation (10 minutes):

Chop the tomatoes. Season with sea salt, olive oil and chopped (or ripped) basil. Cut thin slivers of the cheese and sprinkle on top.

Enjoy with a glass of cool white wine or lemonade made with fresh lemons.
