Herbs matter more than you’d think

Herbs are one of the few ingredients that you can pick up from the earth and use, raw or cooked.

I have always loved fresh herbs. There is a sense of freshness and proximity that makes them special. The picture you see above – made with my phone – reflects that: picked from the garden and straight into the pan. In this case they disappeared into the depths of an Italian “Ragu”. But a lot of the time they can be used raw, not as a decorative prop, or a last minute thought, but as an important part of a dish. An example of this is the Morrocan Tabbouleh where the main ingredient is parsley. Yes parsley!
